I've been reaping green beans from my garden for a few weeks now and I don't can, and I don't like to freeze them. I'm looking for wonderful recipes to use them with something other than my standard--boil for a few minutes, drain, add butter and salt and pepper. It's my fave, but it gets old after a little while...
From my friends, I got one recipe. Cut up and fry a lb. of bacon and add the beans to it until they become tender. They assure me that this is wonderful, and I have zero doubt about that. Somehow, I can't make myself prepare this recipe. Talk about a walking heart attack...another idea was to melt cheddar on them. This is very good, but I prefer to use it on canned beans and very rarely.
One cold salad I love is the one from Ruby Tuesday's salad bar. They stopped putting it on there a few years ago, and I can't remember the flavors. If anyone knows, I would be eternally greatful for a recipe, or the gist of it :) I can't quite recall if it is more vinegar, oil, or general seasoning...drats!
